The school holidays arrived this week, and this has slowed down the amount of fresh produce being bought by households.
In a medium saucepan, combine sugar, water and honey. Stir over medium heat until mixture comes to a boil. Without stirring, simmer over low heat for 5 minutes. Stir in lemon juice; cool to room temperature. Cut melon from rind, reserving only red fruit.
Cut melon into small cubes, making approximately 8 cups. Puree 2 cups of melon cubes at a time in a blender or food processor fitted with metal blade. Stir into cooled honey.
Pour into ice cream canister. Freeze in ice cream maker. Alternatively place mixture into your freezer, and stir every 30 minutes until frozen.
