Motorama Great Tastes: Watermelon Sorbet

The school holidays arrived this week, and this has slowed down the amount of fresh produce being bought by households.

This means that it is a great time to purchase good quality produce, for a lower price. A large number of vegetables are at top quality this week, including beetroot, broccoli, beans, capsicums, celery, sweet corn and carrots. Hard produce including sweet potato, onions and pumpkin as also a good pick.

If you enjoy a great salad, leaf mix, shallots, iceberg and cos lettuce varieties are affordable this week and should give you a great option for taking your own lunch to work! Our recipe this week will be using Watermelon.

This summer favourite, for many, has had its prices drop just in time for this school holiday period. Sourced from BigOven.com with a 4.5/5 star rating, this Watermelon Sorbet will make the perfect indulgence for a hot day!

Ingredients for 12 servings:

  • 2/3 Cup Sugar
  • 1/2 Cup Water
  • 2/3 Cup of Honey
  • 2tb Lemon Juice
  • 1/4 large Watermelon

Method:

In a medium saucepan, combine sugar, water and honey. Stir over medium heat until mixture comes to a boil. Without stirring, simmer over low heat for 5 minutes. Stir in lemon juice; cool to room temperature. Cut melon from rind, reserving only red fruit. Cut melon into small cubes, making approximately 8 cups. Puree 2 cups of melon cubes at a time in a blender or food processor fitted with metal blade. Stir into cooled honey.

Pour into ice cream canister. Freeze in ice cream maker. Alternatively place mixture into your freezer, and stir every 30 minutes until frozen.
