Motorama Great Tastes: Banana Pancakes

June 19th, 2013 - The weather is cooling down, and the desire to stay healthy and avoid the dreaded cold/flu is rising. As a result we’ve got the latest fresh produce report straight from the Brisbane Produce Market for this week. 

The best quality and cheapest fresh produce for this week includes Asian vegetables, beetroot, broccoli, Brussels sprouts, cabbage, capsicums, cauliflower, celery, eggplant, silverbeet, spinach, sweet corn and zucchini. 

If you’re feeling a little exotic, you can try the tart tasting quince, pomegranates filled with juicy, sweet crimson kernels covered by red, gelatin-like flesh, mangosteens with their delicate, sweet, slightly acid flavor and the granular fleshed egg shaped feijoa. There’s no doubt there’ll be something new for you to try in that list. 

When it comes to everyday fruit, Cavendish bananas, strawberries, most citrus including grapefruit, lemons, limes, navel oranges, a wide range of mandarins, along with seedless melons, pears and kiwifruit are all bargain priced. 

You’ll also find pawpaw, passionfruit, figs and pineapples not at their cheapest, but at affordable prices. Now, as we said, the weather is cooling down and on those cold mornings it’s nice to have a great warm breakfast to start the day. 

Down below we’ve got a beautiful banana pancake recipe from Woolworths:

  • 2 cups self raising flour
  • 2 tbs caster sugar
  • 80g butter, melted
  • 4 bananas, peeled, sliced diagonally
  • 1 tbs icing sugar
  • ½ plain flour
  • 2 1/3 cups milk
  • 1 egg, whisked
  • 300ml-thickened cream
  • ½ tsp ground cinnamon
  • Strawberries & maple syrup, to serve

Sift flours into a large bowl. Add sugar and stir well. Stir in combined milk, butter and egg and whisk until smooth. Lightly grease a non-stick frying pan and heat over a medium heat. Pour about 1/3 cup of batter into the pan. Place some banana slices on top of the batter. 

Cook for 2-3minutes or until bubbles form on the surface and the pancake is golden underneath. Turn over and cook for a further 1-2minutes or until cooked through. Transfer to a plate and keep warm. Repeat with remaining mixture. Whip the cream with the cinnamon and icing sugar until thick. \

Stack the pancakes and top with cream. Serve with strawberries and remaining banana, drizzle with maple syrup to serve.
